  • Total Time: 35 minutes
  • Yield: 8-10 servings

Description

This Vanilla Nut Granola combines oats, nuts, and a touch of vanilla for a sweet, crunchy treat that’s perfect for topping yogurt, smoothie bowls, or enjoying by the handful. It’s simple to make and easily customizable to suit your taste preferences.

Ingredients

  • Rolled Oats: 3 cups (300g)
  • Chopped Nuts (Almonds, Pecans, or Walnuts): 1 cup (120g)
  • Shredded Coconut (Optional): 1/2 cup (40g)
  • Maple Syrup or Honey: 1/3 cup (80ml)
  • Coconut Oil or Melted Butter: 1/4 cup (60ml)
  • Brown Sugar: 2 tbsp
  • Vanilla Extract: 1 1/2 tsp
  • Cinnamon: 1/2 tsp
  • Salt: 1/4 tsp
  • Dried Fruit (Optional, e.g., Raisins or Cranberries): 1/2 cup (70g)

Instructions

  • Preheat Oven:
Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper.

  • Combine Dry Ingredients:
In a large mixing bowl, combine the rolled oats, chopped nuts, shredded coconut (if using), cinnamon, and salt.

  • Mix Wet Ingredients:
In a small saucepan or microwave-safe bowl, melt the coconut oil or butter. Stir in the maple syrup or honey, brown sugar, and vanilla extract until well combined.

  • Combine and Coat:
Pour the wet mixture over the dry ingredients. Stir until all the oats and nuts are evenly coated.

  • Spread on Baking Sheet:
Spread the granola mixture evenly onto the prepared baking sheet in a thin layer.

  • Bake:
Bake for 20-25 minutes, stirring halfway through to ensure even browning. The granola is done when it’s golden and fragrant.

  • Cool and Add Dried Fruit:
Remove from the oven and let the granola cool completely on the baking sheet. Once cool, stir in any dried fruit, if desired.

  • Store:
Transfer the granola to an airtight container. It will keep for up to 2 weeks at room temperature.

Notes

  • For extra crunch, add sunflower seeds, chia seeds, or flaxseeds.
  • Adjust the sweetness by adding more or less maple syrup or honey.
  • This recipe is versatile; swap nuts, dried fruits, or spices to suit your preferences.
