Ingredients
- Rolled Oats: 3 cups (300g)
- Chopped Nuts (Almonds, Pecans, or Walnuts): 1 cup (120g)
- Shredded Coconut (Optional): 1/2 cup (40g)
- Maple Syrup or Honey: 1/3 cup (80ml)
- Coconut Oil or Melted Butter: 1/4 cup (60ml)
- Brown Sugar: 2 tbsp
- Vanilla Extract: 1 1/2 tsp
- Cinnamon: 1/2 tsp
- Salt: 1/4 tsp
- Dried Fruit (Optional, e.g., Raisins or Cranberries): 1/2 cup (70g)

Preheat Oven:
Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper. -
Combine Dry Ingredients:
In a large mixing bowl, combine the rolled oats, chopped nuts, shredded coconut (if using), cinnamon, and salt. -
Mix Wet Ingredients:
In a small saucepan or microwave-safe bowl, melt the coconut oil or butter. Stir in the maple syrup or honey, brown sugar, and vanilla extract until well combined. -
Combine and Coat:
Pour the wet mixture over the dry ingredients. Stir until all the oats and nuts are evenly coated. -
Spread on Baking Sheet:
Spread the granola mixture evenly onto the prepared baking sheet in a thin layer. -
Bake:
Bake for 20-25 minutes, stirring halfway through to ensure even browning. The granola is done when it’s golden and fragrant. -
Cool and Add Dried Fruit:
Remove from the oven and let the granola cool completely on the baking sheet. Once cool, stir in any dried fruit, if desired. -
Store:
Transfer the granola to an airtight container. It will keep for up to 2 weeks at room temperature.
