Spinach Kugel Recipe: A Healthy Twist on a Classic Dish

  • Author: Louisa
  • Total Time: 55 minutes
  • Yield: 6-8 servings 1x

Description

This Spinach Kugel combines tender noodles, vibrant spinach, and a creamy, flavorful mixture of eggs, cheese, and seasonings. It’s an easy-to-make dish that’s comforting, hearty, and versatile—perfect as a side or main dish.

Ingredients

Scale
  • 12 oz wide egg noodles
  • 2 tablespoons butter (plus extra for greasing)
  • 16 oz frozen spinach, thawed and drained
  • 1 medium onion, finely chopped
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 1 cup shredded mozzarella or Parmesan cheese (plus extra for topping, optional)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon nutmeg (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or casserole dish with butter.

  2. Cook the noodles: Boil the egg noodles in salted water according to package instructions. Drain and set aside.

  3. Sauté the onions: In a skillet, melt the butter over medium heat. Sauté the onions until they are soft and translucent, about 5 minutes. Add the drained spinach and cook for another 2-3 minutes. Remove from heat.

  4. Mix the wet ingredients: In a large mixing bowl, whisk together the eggs, sour cream, cottage cheese, shredded mozzarella (or Parmesan), garlic powder, nutmeg (if using), salt, and pepper.

  5. Combine everything: Add the cooked noodles and spinach mixture to the bowl with the wet ingredients. Mix until everything is evenly combined.

  6. Assemble the kugel: Transfer the mixture to the prepared baking dish. Spread it out evenly. If desired, sprinkle extra cheese on top for a golden, cheesy crust.

  7. Bake: Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the kugel is set in the center.

  8. Serve: Allow the kugel to cool for a few minutes before slicing. Serve warm as a side dish or main course.

Notes

  • Make-Ahead Option: The kugel can be prepared up to the baking step, covered, and stored in the refrigerator for up to 24 hours. Bake just before serving.
  • Variations: Add sautéed mushrooms or crumbled feta cheese for extra flavor.
  • Gluten-Free Option: Use gluten-free noodles to make this dish suitable for gluten-free diets.
