Ingredients

Scale

For the Kunafa Base:

  • 300g kunafa dough (shredded filo pastry)
  • 100g unsalted butter, melted
  • 2 tablespoons powdered sugar

For the Filling:

  • 200g milk or dark chocolate, melted
  • 100g pistachio cream
  • 1/2 cup crushed pistachios

For the Syrup:

  • 1/2 cup sugar
  • 1/2 cup water
  • 1 tablespoon rose water (optional)

For Garnish:

  • Crushed pistachios
  • Chocolate drizzle
  • Edible gold leaf (optional)

Instructions

  1. Prepare the Syrup:

    • In a small saucepan, combine sugar and water. Bring to a boil and stir until the sugar dissolves.
    • Simmer for 5 minutes, then remove from heat. Add rose water if desired and let it cool.
  2. Prepare the Kunafa Base:

    • Preheat your oven to 180°C (350°F).
    • In a large bowl, mix the shredded kunafa dough with the melted butter and powdered sugar until fully coated.
    • Divide the kunafa dough in half. Press one half into the bottom of a greased 9-inch round baking pan.
  3. Layer the Filling:

    • Spread the pistachio cream evenly over the first layer of kunafa dough.
    • Drizzle the melted chocolate on top and sprinkle with crushed pistachios.
    • Add the remaining kunafa dough, pressing gently to create a flat top.
  4. Bake the Kunafa:

    • Bake for 25-30 minutes or until golden and crispy.
  5. Add the Syrup:

    • Remove the kunafa from the oven and immediately pour the cooled syrup evenly over it. Let it soak for 5 minutes.
  6. Garnish and Serve:

    • Garnish with additional crushed pistachios, a drizzle of melted chocolate, and edible gold leaf if desired.
    • Slice and serve warm or at room temperature.

Notes

  • Storage: Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to a week.
  • Variation: Swap the pistachio cream for hazelnut spread or add a layer of cream cheese for a tangy twist.
  • Tips: For extra crispiness, toast the kunafa dough lightly before assembling the layers.
