Instructions

  2. In a large mixing bowl, combine the granulated sugar and vegetable oil. Mix until well combined.
  3. Add the eggs and vanilla extract to the wet mixture and stir until smooth.
  4. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  5. Cover the dough and refrigerate for at least 2 hours or overnight.
  6. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Scoop out tablespoon-sized portions of dough, roll them into balls, and coat them generously in powdered sugar.
  8. Place the coated dough balls onto the prepared baking sheet, about 2 inches apart.
  9. Bake for 10-12 minutes, or until the cookies have crinkled tops and are set around the edges.
  10. Remove from the oven and let cool on the baking sheet for 2 minutes before transferring to a wire rack to cool completely.
