Benigni’s Potato Soup is a creamy, hearty, and comforting dish that’s perfect for chilly evenings or anytime you crave a warm bowl of goodness. Packed with tender potatoes, aromatic seasonings, and rich flavors, this soup is both satisfying and easy to prepare.

- 4 large potatoes, peeled and diced
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream (or milk for a lighter version)
- 2 tablespoons butter
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Optional toppings: shredded cheese, crumbled bacon, chopped chives, or sour cream
Instructions
- In a large pot, melt the butter over medium heat. Add the onion and garlic, and sauté until softened and fragrant, about 3-4 minutes.
- Add the diced potatoes to the pot and stir to coat them in the butter mixture.
- Pour in the chicken or vegetable broth, and bring the mixture to a boil. Reduce the heat to medium-low, cover, and simmer for 15-20 minutes, or until the potatoes are tender.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the mixture to a blender in batches, then return it to the pot.
- Stir in the heavy cream, dried thyme, and season with salt and pepper to taste. Heat the soup over low heat until warmed through.
- Serve hot with your choice of toppings, such as shredded cheese, crumbled bacon, chopped chives, or sour cream.
Notes
- For a thicker consistency, add 1-2 tablespoons of cornstarch mixed with water to the soup before blending.
- You can substitute sweet potatoes for a sweeter variation of the recipe.
- This soup can be made ahead and stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
